Perfectly Seasoned Grilled Trout

Bring out the best in our fresh trout with a simple yet flavourful blend of herbs, garlic, lemon, and a touch of olive oil. Grilled to crispy-edged, tender perfection, each bite offers a balance of smoky char and zesty brightness.

 

It’s an easy, healthy, and impressive dish—ideal for backyard barbecues, weeknight dinners, or summer gatherings. Serve with roasted vegetables, fresh greens, or herbed rice for a complete meal.

  • 2 whole trout, cleaned and butterflied (about 10–12 oz each)

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tsp lemon zest

  • Juice of 1 lemon

  • 1 tsp sea salt

  • 1/2 tsp freshly ground black pepper

  • 1 tsp paprika (optional, for smoky depth)

  • 1 tbsp fresh parsley, chopped

  • 1 tbsp fresh dill or thyme, chopped

  • Lemon slices, for stuffing and garnish

  • Preheat the grill
    Preheat your grill to medium-high (about 375–400°F). Clean and lightly oil the grates to prevent sticking.

  • Prepare the seasoning
    In a small bowl, mix olive oil, garlic, lemon zest, lemon juice, salt, pepper, paprika (if using), and chopped herbs.

  • Season the trout
    Pat the trout dry with paper towels. Brush the inside and outside of each fish with the seasoned oil mixture. Stuff the cavity of each trout with lemon slices and a few extra sprigs of herbs if desired.

  • Grill the trout
    Place the trout skin-side down on the grill. Grill for about 4–5 minutes per side, depending on thickness, until the flesh is opaque and flakes easily with a fork. Use a fish spatula to turn carefully.

  • Serve
    Remove from the grill and let rest for 1–2 minutes. Serve with lemon wedges and an extra sprinkle of fresh herbs.
